Easy Peasy Thai Sauce

This no-brainer sauce makes your cleanse meals instantly exciting!

Ingredients

1/2 c almond butter
1/2 + 1 c filtered water (or coconut milk for a richer, sweeter sauce)
3 tbsp organic, cold-pressed sesame oil*
3 tsp Red Boat fish sauce or, if vegetarian, Coconut Aminos (you can add more to taste)
3 tsp lime juice 1/2 bunch cilantro or basil, finely chopped

Instructions

Place all ingredients, except cilantro/basil and green onion, in a blender or food processor and blend until smooth and creamy. Adjust consistency as desired. Toss in half of the herbs and green onion and combine thoroughly. Pour over grilled or poached chicken, fish or veggies and garnish with left over herbs and green onion.

*While cleansing, cold-pressed oils are best, as there is less chance for rancidity and free radicals in cold-pressed oils. Organic toasted sesame oil will yield a richer flavor. Store sauce in tightly sealed jar in the coldest part of your fridge, and it will last about a week. I put a layer of wax paper right on the top of the sauce to reduce oxidation and keep flavors fresh.

PHYTO-FUNCTION : BASIL

Basil is a nutrition super-star: one of the constituents in its essential oil, eugenol, is a well-researched anti- inflammatory/anti-oxidant compound that beneficially modulates pro-inflammatory enzyme systems like cyclooxygenase (COX). Eugenol and other basil compounds are also anti-microbial, and the whole plant is nutrient rich—a great source of vitamins K, A, C, and folate. In aromatherapy, we also use basil to heighten attention and focus, and improve mood. It’s a great carminative for the elimination of digestive gas, and is used in natural acne- fighting skincare routines for its anti-microbial and anti-fungal properties. Amazing!
