Super Power Adaptogen Powder Protein Cookie Dough Bites

This tasty herbal treat is a perfect mid-morning or early afternoon Cleanse pick-me-up for the times you might be crashing/craving/irritable and reaching for something sweet and caffeinated.

Full of healthy fats, fiber, protein and herbal adaptogens, these superfood cookies will keep you fueled without the down slope on the other side. They actually contribute to your system—which is what good food and herbs should do! Enjoy with a cup of Relax & Digest tea or brewed Reishi Roast for the ultimate indulgence.

Ingredients

3 c of raw nuts and/or seeds (I use a combination of brazil nuts, cashews and pumpkin seeds)
4 dried dates (pits removed)
1/2 c coconut flakes
2 tsp raw honey or maple syrup (optional; you may use a couple of drops of stevia instead)
1/2 c collagen or sprouted brown rice protein
2-3 tbsp coconut oil
1 tsp vanilla
1/2 c Super Power Adaptogen Powder
2 tbsp unsweetened organic apple sauce

Directions

Pulse nuts and/or seeds in a food processor until uniformly but roughly chopped.
Add all other ingredients and process until a thick, but workable paste is formed.
Form into balls on a cookie sheet and, if desired, press with your thumb to form a "cookie" (you can also leave them as balls).
Refrigerate until firm and enjoy.

Note: If you made this recipe and the dough is too moist to form balls, add more coconut flakes until you can form into balls or cookies. Or, as I often do, leave as "dough" and enjoy by the spoonful!
